Cranberry Vanilla Muffins

Oh’ My’ these “Cranberry Vanilla Muffins” are delicious and perfect to make this holiday season. Whether there for your next door neighbors, for your friends, to take to your co-workers, or to serve at your next Holiday dinner…. they are a win win all around! 

So today I am in the midst of utter chaos, messes,  and boxes everywhere, we are in the middle of a move. Sighhh… I can’t wait to settle into the new place. In the meantime I wasn’t going to let a messy move keep me from having some “Sweet” fun in the kitchen. So I turned on Pandora on my phone and went straight to the Christmas music. (i puffy heart Christmas music) I pulled up a chair for my boys to let them watch me work my magic. We got busy having all kinds of baking fun. 

Ingredients:
1 cup sugar
1/2 cup unsalted butter
2 large eggs
1 tsp. vanilla extract
2 cups unbleached all purpose flour
1/2 tsp. grated nutmeg
2 tsps. baking powder
1/4 tsp. salt (necessary)
1/2 cup milk
2-1/2 cups fresh cranberries, coarsely chopped

How to Prepare:
Preheat oven to temperature 375°F. Line 12 muffin cups with paper liners. Using an electric mixer, cream sugar with butter in a mixing bowl until smooth. Add eggs one at a time, beat in each one real well. Next add vanilla. Now you can sift in your next 4 ingredients into the bowl. Add your dry ingredients to the creamed mixture alternately with milk, mixing until smooth and fluffy. Fold in cranberries. Divide batter into the muffin cups, filling each one almost full. Bake about 16 minutes, or until golden brown. Check with an inserted toothpick if the center of a muffin comes out clean YOU ARE GOOD TO EAT! SERVES 12-15

THEY ARE BEST EATEN AND ENJOYED WITH SOME DELICIOUS COUNTRY CROCK BUTTER ALL MELTED ON TOP, AND A COLD GLASS OF MILK.
